Multi-Grain Crunch Salad

The nutty texture of Minute® Multi-Grain Medley with fresh, colorful red bell pepper, carrots and celery and chicken make this salad satisfying.

  • Ingredients
    1 bag Minute® Multi-Grain Medley, uncooked
    1 cup vegetable broth
    1 cup cooked chicken breast, diced
    1/3 cup celery, sliced
    1/3 cup carrot, sliced
    1/3 cup red bell pepper, seeded and sliced
    1/3 cup citrus vinaigrette
    lettuce leaves
  • Directions
    Prepare Multi-Grain Medley according to package directions, substituting broth for water. Cool. In a medium bowl, combine chicken, celery, carrots, bell pepper and vinaigrette. Mix well. Fold in Multi-Grain Medley. Serve on lettuce leaves.

    Wow - wasn't sure I would like rice cold.............this is awesome. This is a great, healthy take-to-work lunch! It is also a great alternative to macaroni and potato salads at picnics. I used chicken, but I bet it would be great with tuna or salmon too. Look online for a good citrus vinaigrette recipe. Easy!
