Pork Medallions with Apricot Glaze

Makes 4 Servings

  • Ingredients
    2 bags Minute® Basmati Rice or Minute® Jasmine Rice
    1 1/2 lbs seasoned pork tenderloin, cut in ¾-inch pieces
    1 Tbsp garlic, minced
    2 Tbsps olive oil
    1/3 cup chicken broth
    3 Tbsps apricot jam
  • Directions
    Prepare rice according to package directions. Season pork with garlic. Heat olive oil in a medium skillet over medium heat. Cook pork until no longer pink. Add chicken broth and apricot jam. Heat through and simmer for 10 minutes. Serve over hot cooked rice.
