Coconut and Cardamom Rice Pudding

Makes 6 Servings

  • Ingredients
    2 bags Minute® Basmati Rice
    1 can (13 1/2 oz.) light coconut milk
    1 cup milk
    1/3 cup sugar
    1/2 cup golden raisins
    1/2 tsp ground cardamom
    1/2 tsp rose water, optional
    1/4 cup toasted sliced almonds
    1/4 cup pistachios, chopped
  • Directions
    Prepare rice according to package directions.  In a heavy bottomed medium saucepan bring coconut milk, milk and sugar to a boil, stirring occasionally.  Reduce heat and simmer 5 minutes.  Stir in rice, raisins, cardamom and rose water, if desired, and cook 5 more minutes, stirring occasionally. Spoon mixture into serving bowls and garnish with almonds and pistachios.
