Flavors of India Chicken

Makes 6 Servings

  • Ingredients
    2 bags Minute® Basmati Rice
    1 tsp cumin seeds
    1 Tbsp vegetable oil
    1 onion, finely chopped
    1/4 cup tomato paste
    1/4 cup water
    1 lb boneless skinless chicken breast, cubed
    1 cup coconut milk
    1 Tbsp brown sugar
    1 jalapeño pepper, minced (optional)
    1/2 tsp ground turmeric, optional
    salt and ground black pepper, to taste
    fresh cilantro leaves, optional
  • Directions
    Prepare rice according to package directions. Heat a large skillet over medium heat. Add cumin seeds and fry until they become fragrant and begin to pop, about 1 to 2 minutes.  Add oil and onions and cook until translucent, 3 to 4 minutes.  Combine tomato paste and water, and pour into skillet. Add chicken and cook 5 minutes, stirring occasionally. Stir in coconut milk, brown sugar, jalapeno, turmeric, salt, and pepper.  Bring mixture to a boil; reduce heat to low, cover, and simmer until chicken is tender and no longer pink in the center, about 10 minutes. Sprinkle with chopped cilantro, if desired, and serve over rice.
